This is designed for anyone hoping to work/help in chalets during the season.
It is not a full training for a Chalet Chef, but it does cover much of the basics
and is the perfect starting point before applying for a job if you wish to do 
the Ski season!

It will include discussion and advice on - breakfast, tea, dinner, canapes, shopping, budgeting, special diets, freezing & food storage,  Health & Safety, menu planning, presentation…. in two days of intense cooking covering stocks, soups, starters, pastry, puddings & baking; vegetables, pasta, rice, eggs, fish & meat cookery and loads of recipes!

Students will work in Groups of 4-6 according to the level they are at. For instance Bronze will require 12 weeks of 1 hour each time. They will learn a new technique
each week and are then required to write up their recipe. They will take their food home after group tastings and discussion.

A helping hand for those with dietary problems - allergies,
diabetes, Gluten & Dairy issues - let's talk it through and
plan some delicious recipes to make eating more enjoyable
and stress free.

Discovering that you or a member of your family has diabetes, or an allergic reaction to ingredients such as Gluten or Dairy foods, can really throw your normal household cooking approach into disarray and be very worrying too. I can prepare a day that will answer some of your worries as well as show you how to create suitable meals with minimal change to your usual cooking methods.
For instance Coeliac (gluten free) diets require the use of special wheat free products – but you can still make delicious family meals such as Spicy vegetable and Chick Pea casserole, Red Pepper and Courgette Mousse, Mushroom Stroganoff Pancakes, Prawn Ratatouille Tartlets, Chocolate Brownies, Lemon and lime curd tart.

The ideal way to encourage the family to eat well is to cook together and eat together. Learning to cook at home is the best place to start. 

Mother and daughter, Father and son, or all the family together, whichever group you prefer can cook together to produce delicious family favourites. Many families enjoy cooking together and many youngsters want to learn but would prefer to be with Mum or Dad. You choose what dishes you wish to learn too.

Half or full day, price on discussion according to numbers and length of course.

Girly Birthdays out:  Lads plan the dinner.  Learn a new skill with friends. This is a unique way for a small group of 4 - 6 good friends to enjoy a celebration cook-in or meal together. Tell me what you want to cook and  I will plan the rest. Cook together and then eat together - make it a real celebration and I can provide a cake and the wine too if you wish!
